Noticed some tendencies here with some teams going all in with 1 QB and others with 2 QBs.

What are the advantages / disadvantages of each system?

I use 1 QB because I want to maximize experience earned. My highest trained player starts for me, but he's currently less experienced than my backup. He has factors, traits/caps/etc. that makes it important for him to monopolize playing time because I'm looking forward to the long-term benefit.

IMO it comes down to Wages and quality of player on the pitch. I don't think anyone would want to waste 1 million per u p d a t e on 2 x 50 skilled QB's, and because I want my best players on the pitch most of the time, I would always "First String" my best QB for league and important Cup matches.... Simple as that.
I don't see much if any drop off in Q4

If you don't have a 50 (ish) skilled QB, then Exp would be the next argument...

I have 3 but each with a purpose,

1 is my number 1 qb, he plays every league and supercup game except for those against bots. He's on a franchise contract, to keep wage as low as possible for as long as I can. since he's only 23 he'll be in this position for at least another 7 seasons.

My number 2 quarterback is a reserve in case my other qb is injured, he's not that good but he won't be awful either when he needs to step up. As soon as I feel his wages are getting too high, I sell or fire him to buy another or replace him with number 3.

Number 3 I take a young work in progress, I play him in friendlies and bot games to get exp and when he's ready he becomes a number 2 and we look for a new number 3.

I would play Reid Hobson with a 1st string tick in all league and cup games until he retirees.....! He's a goodun, just needs more Exp
In about 6 seasons, get yourself his long term replacement and play him in easy Cup games and friendlies for Exp and repeat forever...

I'd be interested in seeing how much of a drop off there is between playing 1 QB all game or rotating 2 or 3 of them.

The RZA All-Stars could help measure that since they rotate 3 QBs.

I tried both (2 QB Starters vs. 1 QB Starter) and I couldn't find significant better results with one or the other. (despite the financal aspect!).
I think it's a question everybody needs to answer on himself depending how you want to build/play the game...

Experience is a huge factor in the game. If you don't play a guy every snap, he won't gain experience as fast. That's the primary reason I generally stick with one.

I'm using two right now, but that is just because of where both my QBs are in development. I have 1 skilled veteran "backup", and one skilled young "Starter." They both have 5* Experience and solid skills, so I am playing them both. Two advantages: they have more energy during the game, they have very different physical builds so it is harder to plan against them defensively.
