What is the path to this league for most European players? There isn't college football - - maybe a few Euros play high school (or potentially college) football, but most didn't. So are there academies like soccer?

The system is totally different. Most sport teams are non commercial public organisations, where members do pay for the sport they want to play. The higher the level the team does get, the more sponsors, mostly local companies, do fund extra money.
The teams do organise youth development, sometimes from very early years on, to senior team.
Usually that some sort of pyramid in terms of amount of teams. The older the kids, the less teams in a country, for every level of strength.
Best players are early, or never, dependent on the type of sport, recruited by pro teams into their youth development programs.
In addition there is school and university sport, but at least in Germany, they have very view impact. They are more for fun and to eventually leading to play in the other teams.
