We have that problem too...in the states, you'll get carbonara sauce that is pretty much alfredo sauce.

When I make carbonara at home, I think the ingredients are usually eggs (mostly yolks), romano cheese, pepper, garlic (because I like garlic) and thinned with pasta water.

So in Italy, can a restaurant serve a codified recipe if they modify it slightly?

They have something like that in the states for food advertising - - like what can be called milk. Recently almond milk was barred from being called milk because it's not from a cow or other mammal.

Sure, in Italy a restaurant can serve a codified recipe by modifying it slightly, but they can't use the codified name anymore.

In Italy most of the people are open-minded about food, so if we call "carbonara + garlic" Steve's pasta it is perfectly legal, and I would like to taste it too!

Days ago I ate a 100% rabbit meat hamburger.
I'd pay to see your face now.
If I call it a hamburger, at the very least you feel a shiver down your spine.

In Italy we still call almond milk ... milk by the way.

@Steve: apart from garlic we are on the same page with Carbonara style pasta. And, if it has to be garlic, I like olive oil / Garlic pasta, they call it "Aglio e Olio" afaik.

Sorry Pete... I do not want to kill anybody and everyone can eat what he prefers for sure.

In Italy food is the second most important thing, and is ranked higher than football.
We are open-minded but we call things using their names.

I think you can agree I cannot make a beer and call it Kölsch , Altbier or .....

If I can give you an advice try "Aglio, Olio e Peperoncino" with chily pepper it is even better.
