How do you experienced players determine who to play at DE vs DT and OLB vs MLB? From what I've been reading in guides and forum, I'm not really seeing any difference in traits needed or used in game calculations.

In RZA DE are pass rushers while DTs takle the ball carrier or make holes for the blitzing LBs.
If a DE wins the matchup against the OT the blitzing LB is uncovered and free to try to sack the QB.

I want for my DEs SPE and STR both above 48, AGI over 40 the high the better.
Instead for my DT STR above 48 and SPE above 40 the high the better.

About traits, I consider like cherries on the cake (so first the player must be a cake) i choose
DE: Heavyweight / Slippery (pass rushers)
DT: Stone Wall (-5% SPE)
Fearsome / Brick Wall / Ball Stripper / Sure Tackle useful for both DE/DT

Talking about LB I train MLB/OLB in the same way, I use INT over 48 or better 50 for MLBs and INT over 43 for OLBs
For both SPE above 48 and AGI the high the better, traits Fearsome/Slippery + SPE=50 + Track star AWESOME.
Anyway I had very good MLB with INT=50 + Slippery despite a SPE of only 47/48.

Stone Wall only has an effect if it has an O-liner, or am I wrong?:
Stone Wall: This player is simply hard to move. Stone wall gives a 5% bonus to not being beaten by the D-Line, but it lowers the players speed by 5%

I've got a trained up QB who I think may catch a good price on the bidlist. What time of the season, if there is one, is it best to put a player on the bidlist in hoping to fetch a good price? Thanks!

If there is such an golden hour at all, I guess it is between weeks 2 an 10. Most cleanups after seasonrollover are done at that point, and the season is still kind of young. However, I could be very wrong on this. Please do not take into account that I am Pete, the owner, for this answer. I have no viable stats on this.

I agree but for example when I have to replace my retiring players buying from the market ready to go players, I try to buy the new ones near the end of the season in order to not pay double wages for the whole season.

I believe there is no specific good time to sell player.

Only thing that matters is are there at least two managers who want him, so that bidding war can start.

If a player is interesting enough, he will get his bids even that it is last week of the season, because someone is buying him for next couple or more seasons.

And, trust me, those billioners can spend a lot of money anytime

But if you want money, big money, player must be good fit for like 5 or 6 teams.

Yes.

If you are the SELLER early season seems to bring out more money.

If you are the BUYER late and end season seem to be good times to save some money.
