I would probably going with carrying for DL (fumble return skill) and carrying/catching for OL (emergency FB/TE).
Or kicking/punting for emergency Kicker/Punter.

I know for me after i max out there primary skills I'll have ol train tackle and dl train block

Giving my roster more flexibility in the event of to many vets players leaving the team. And to also boost there tm value if I would decide to sell them

Definitely tackling for OL.

For DL, harder to call. They are in the punt return team so I train blocking for them but don't know if it does much. Make sure PC is 100% as well.

Tackling for OTs definitely ...
DL ... I might have to think about blocking before carrying ... and rumblin .. and stumblin

Tackling for OTs definitely ...
For DL I do not think any further skill is worth pushing, so I try to further upgrade the maxxed out physicals
