I have played 2 full seasons now, and finally noticed something pretty crucial that is most likely a contribution to my offensive woes (besides only having 2 seasons under my belt).
In my latest game summary stats I found a statistic that tells % of playbook coverage used on offense and defense. On defense I have been using 100% of the plays allotted to me in basic mode. On offense however, I have been running the same 5 plays all game long out of 70, or 7%.
Does anybody know why this is, and how I can correct it for future matchups?

The PB check function is your friend.

Load in different yards, times, downs and see what play is set.

Change it, fix it, add new plays to your liking.

Ok. There's a big warning about that.
Are playbooks pretty user friendly? It's the off-season, so it would be the perfect time to dig into finally coming up with my playbooks for the first time, but do you have any words of wisdom/advice?

Keep it very simple at first. Play that PB in a friendly. Add more complexity, rinse and repeat.

Reason for this is that it's very easy to make mistakes or forget sth that could cost you a game (for example, not kicking a FG on 4th down).

Seems I saw on you tube a video about RZA play book building. Never watched it though.

Advice: Use your check function to confirm your work.

You know - FG kicking and punting when you want/need to and stuff like that.

If you set commands based on time, set the lowest increment at the top down to the largest. ex. 0:15 down to 14:00

If you set commands based on field position, set the lowest increment at the top down to the largest. ex. 5 down to 95

It took me 2 seasons to realize this mistake.

I've played a whole season and finally diving into creating my own playbook.

For the most part I don't think I want to set play calls or formations. I'd like to have a good balance playcalling. I do know I don't want any playcalls out of flexbone or wishbone. Is there a way to make sure they don't call plays out of specific formations?

I've set some special sets for end of half and end of game when trailing under certain time frame. But I think setting specific calls and playsets for the rest of the game would cause my team to be heavy in either run or pass under specific formations and I don't want that.

Anyway, any advice to building a playbook would be greatly appreciated.

If I want to import a playbook for offense and defense do I add new playbook and then import?

You can import right into the standard playbook. I have additional playbooks that I import into for editing purposes. That's personal preference and it's not necessary.
