How risky is it to hire a 60 year old AC? Do we get some kind of notification that this coach wants to retire at the end of the season before hiring?

Yes, there is a notification.

It is just a matter of luck. We raise the chance year per year so he will retire for sure, but it is possible - if luck is there - to have a 80 years old coach

Even as I place the bid on this coach (right now), should I see the notification that he'll retire? If he retires of course.

And if he retieres do i get the Teamchemistrie and Moral Penaltys at the End of the Season and do i have to wait till the Contract experies to get a new one for the next season?

Good question! TC and Moral penalty could always be dodged by firing the coach, but since he's retiring anyway it wouldn't be worth the 5x wage penalty...

It does not depend on the fact he is retiring or not, it depends on the fact if you are replacing an existing coach!

Replace = penalty

Just wait for his retiring, and start hiring a new one then
