I got 2new players from YA and im not sure what to do with them.

Some tackling and vision, was pulled as LB but im not sure if he has enough int for this position?

20yo
40.3 Str Red
50Speed

27,5Int
45TW
Natural Leader

This was pulled as QB but he dont have enough Int for that position i would think.Probably FB/RB?
I read somewhere that WR should have also a decent amount of Int but not sure.

Your first one. Playing him at dl would be good spot. If you could get him trained up. Or are in need.
As for number 2 I would go with rb.

Although I have had sucess with low int wr in the past. But that was long time ago.

I have a 50 STR, 50 SPD and 50 INT guy at OLB, but he doesn't get much work there, would it be wise to make him a CB?

I would move this guy to DE if you have the depth already at LB. MLB specifically. He will definitely get lots more work at DE though.

I have 2 great DEs already and I also think that making him a DL would waste his INT.

What do you think about making him a CB though?

He would be fast enough to (at least) keep up with WRs, strong enough to tackle every opponent and intelligent enough to get a decent amount of interceptions.

If he young enough just make him a QB Should be very hard to sack

I haven't looked into my team's Int number's at the CB position since looking for higher intelligence guy's but your theory is sound in my book. If you're stacked on the Dline and at LB then CB is your next best bet.

QB is also a viable option depending on his age and your patience to train the skills

I wouldn't waste any 50/50 guys at DE. My "best" DE (50 STR, 49.2 SPD, 44 Tackling, 43 Footwork, 40.6 Vision, 38.9 Agility, 39.7 Intelligence, 43.5 Teamwork, 4.5 Experience), doesn't do any better than guys with half his speed. I think the tweaks Pete made have made speed much less important for DE (which is probably reasonable).

I also do have a 50/50 physical monster on my roster with 45 INT & 40 TMWK he can play wherever he wants (especially on the defensive side) but I don't know which position I should fix him

Don't have any numbers at the moment but imo, I feel the 50/50 guys are better used at DE because they are constantly chasing the QB/RB on every play. Also, it is exceptionally rare for OT's to have both physicals trained to this level, giving the DE a slight advantage on almost every play.
