I think you're going to have to play around with the settings in-game to find out what works best for you.

There isn't a 'best defense for X formation' as different downs, yards to go and game situations means the most effective defense formation isn't always the same. To become great at this game you have to a l t e r formations on a game-by-game basis. Effort = reward.
