So what affects the team percent ratings in each category? I've added players and moved the depth chart around but my percent hasn't changed. Not that it matters for in game, I am just curious.

If I played vs a team that had say 32.4% on run defense, what does that mean?

It is checking your rosters for players involved in "Pass O", "Rush O" and so on. Then it sums up the rating. Nothing to do with the depth chart.
