I know there are a few Germans on the site...does anyone have a favorite recipe for Schinkennudeln?
My grandmother used to make this for me - - it was probably an Americanized version, because she was probably several generations from having immigrated from Karlsbad / Bohemia area. I was going to make it for my kids and was I'm not sure is exactly how much the eggs get cooked. Also, what kind of noodles to use. We have a German grocery store near me...but I think the proprietor is from Berlin - - so maybe he has different ideas on what to use. Thanks, Steve SD Blitz |

Are you talking about "Schinkennudeln", or "Krautnudeln"?
For the pasta: any pasta "italian standard style" will do, I am sure. The regular german pasta is either pasta italian style, or "Spätzle". Based on some google, Schinkennudeln are made out of italian pasta style noodles. I found this one 500 gr Pasta, Spirelli 400 gr boiled ham 2 average sized Onions 6 Eggs Salt, Black pepper clarified butter (taken from dictionary, in German Butterschmalz) Herb, optional Pasta -> all dente ham into 2 to 3" long stripes, Cut the onions into cubes Take a pan, heat up the clarified butter, and put ham and onion in there until they start changing color. Put the pasta in the pan. Pepper and Salt as you like, Put the eggs in piece by piece, stir, until the egg becomes solid. Add herbs as you like. Last edited on 2021-12-20 15:47:23 by pete |

Spätzle is usually an egg pasta.
Most of the Italians in the states came from southern Italy, so I think most of the Italian pasta is "water" pasta. Krautnudeln usually has cabbage or maybe sauerkraut in it? Thanks, Steve SD Blitz |

Sounds 'lecker'. I would prefer 'Spätzle' on this. And I think I would add also Cheese, a lot of cheese.

Yeah...I saw one recipe that put shredded Emmental on top....also another with bread crumbs.

Depending on the cheese U use, there is the danger of "killing" the other incredients. I would not add strong cheese, at least.

Okay...I made this the other day. It came out okay...the fried ham bits are really good. Overall, the dish was a little bland for my current tastes (even with the nutmeg & pepper) - - but I'm sure when I had it as a child I was more accustomed to plainer food.
